This right here, is my favourite savoury breakfast recipe & god knows for how many years I have been making these delicious open sandwiches or vegetable cheese toasts that are absolutely perfect for a quick and easy breakfast fix on a busy morning to work. A crispy bread base, toasted golden brown and crunchy, topped with soft cheese and vegetable filling, so so good & absolutely fuss-free.

A couple of slices of these vegetarian cheese toasts and a glass of dalgona coffee is what my quarantine breakfast has lately been looking like! I love making toasts for breakfast and isn't it amazing how they come with such flexibility for variations? These chilli cheese corn toasts or these super yummy fancy creamy mushroom toasts make an occasional appearance in my meal plan but most often visits are paid by these really basic (Indian style) veggie cheese toasts with vegetables. The best part? You can make so many of these at once! We make 6-8 for a large family breakfast making this a great option for large crowds or brunches.

How to make vegetable cheese toasts?
Prepare your veggies and cheese mixture:
- Roughly chop veggies of your choice: I used onions, capsic*ms, tomatoes and some corn - really basic, nothing fancy. But you can add mushrooms/ coloured peppers (really, anything that you like!)

- Grate some cheese: I used a mix of mozzarella & cheddar cheese but for extra melty texture, you can use only mozzarella (and skip the cheddar cheese)

- Mix some of the cheese with the veggies in a bowl. Add salt, pepper and oregano.
- Spread some butter on the bread slices and add the vegetable and cheese mix & top with the remaining cheese.

- Transfer to the oven and bake until super melty and the bread slices are brown and toasted.

- Sprinkle some oregano and chilli flakes on these crunchy toasts and enjoy 🙂
Update on cooking method (12. June 2020) - a reader told me that they made these vegetable cheese toasts in the air fryer and it worked like magic. So if you dont have an oven, you can this amazing vegetarian breakfast without oven by using an air fryer for these toasts 🙂

Description
Quick and easy, fuss free, perfect for savory breakfast, these delicious vegetable cheese toasts are like open sandwiches filled with cheese and veggies of your choice.
Ingredients
Scale
- 6 bread slices
- 3 tbsp butter (softened to room temperature)
- 1/2 cup red onion (finely chopped)
- 1/2 cup green capsicum (finely chopped)
- 1/2 cup tomatoes (finely chopped)
- 1/2 cup sweet corn (boiled)
- 1 tsp dried oregano
- salt
- pepper
- 1 cup grated/ shredded cheese (I used a mix of mozzarella and cheddar) *See Note 1
Instructions
- Preheat the oven to 180 degree celsius.
- To a bowl, add chopped onions, tomatoes, capsicum and corn.
- Add salt, pepper, oregano and mix well.
- Add about 1/3 cup of grated cheese to the vegetable mix. Mix well and keep aside.
- Spread softened butter on each bread slice and add the cheese and vegetable mix on top.
- Add the remaining shredded/ grated cheese evenly on the bread slices and transfer them to the oven and bake for around 15 minutes or until the cheese is melted.
- Serve hot.
Notes
- For this recipe I used a mix of cheeses: 1/2 cup mozzarella and 1/2 cheddar cheese, but for extra melty toasts, skip the cheddar and use mozzarella only.

Hi, I used local mozzarella (chowdhary) and cheddar was Cathedral (imported) but for best results and really melty toasts, I highly recommend that you use just mozzarella.
